Breakfast Caserole

Sometimes you have a potluck to go to and sometime you just don’t want to stand over a stove for half the morning cooking breakfast. This recipe is very easy and will be sure to please any crowd. I found this recipe online somewhere. It’s actually a combination of two recipes because I liked some ideas in one recipe and some in another. The finished product is quite savoury.

Ingredients:

  • 5 eggs
  • 1.5 cups of cheese (I used one cup because my husband doesn’t like cheese– i know, right? Who doesn’t like cheese!?)
  • 1 cup of chopped ham (it must be already cooked)
  • 1 pound (about half a bag) of frozen potatoes — potatoes o’brian, chopped potatoes, tater tots, hash browns
  • 1 tsp-1.5 tsp dry ground mustard
  • Dash of cayenne pepper
  • Paprika (sprinkle on top @ end)

Directions:

There are two methods to choose from. The first includes the oven browning method. The second is the skillet browning method.

OVEN METHOD-

Preheat oven to 400 degrees. Spray your pan with non stick cooking spray and toss your frozen potatoes in. Season your potatoes with seasoning pepper (or regular pepper), kosher salt, and onion powder. Bake for about 20 minutes or until your potatoes are nice and crispy.

OR

Skillet Method

Brown your potatoes in a skillet with about 1-2 tablespoons of oil. Remember to season your potatoes. Transfer your potatoes back into your dish.

** TIP- the deeper the dish, the longer the cooking time.

Preheat your oven to 350 degrees

Crack your eggs and whisk with about a half a cup of milk. Add in your ground mustard & cayenne pepper.

Chop up your ham and mix with your cheese.

Layer your ham/cheese on top of your crispy potatoes.

EVENLY pour your egg mixture over everything. Oh, DARN! Now my potatoes are soggy with egg. Don’t worry, you’ll be glad you browned them first when it’s done cooking.

Sprinkle paprika over the top.

Plop that dish in the oven and wait 20-40 minutes. I say 20-40 minutes because cook time varies with your oven and which baking dish you decided to use. My casserole took 40 minutes to cook. Stick a knife in your casserole and if it comes out clean, then it’s done.

THAT WAS EASY! This dish is perfect for when you have company or a potluck to go to. I took this to my MOPs meeting on Wednesday & it was devoured.
