Happy Birthday GiGi


My grandma (Austin’s GiGi) is amazing and deserves the best. With our looming move and being so busy packing and getting ready, we decided to do a nice little get together at my house. initially, Justin and I wanted to have everyone over to go through our stuff and pick out what they wanted to take home. However, my brother and his girlfriend were out of town, my cousin and his girlfriend were working, and Justin’s brother and girlfriend were unavailable. So much for that idea. Haha.

Anyways, for her birthday I made these yummy Blueberry Lemon Cupcakes & a crafty frame idea I found on Pinterest.


The recipe initially came from Brown Eyed Baker, but it required a couple tablespoons of Limóncello liqueur and I didn’t want to buy a whole bottle of that for just a couple tablespoons. Instead, I opted for blueberries since they were on sale for a dollar! I’ll post my recipe later (when we aren’t in the middle of a move). I used the blueberry juice as a substitute for Limoncello.

I learned a couple of things baking these cupcakes:

1.) Allow your muffins to cool COMPLETELY before frosting (I always get so impatient)

2.) I am NOT good at making smooth lemon curd (any suggestions would be greatly appreciated)

I used the back of a frosting tip to pop holes out of the cupcakes and filled them with the lemon curd then covered them with frosting. Delish!

4 candles because GiGi loves the number four and her age can be converted into a 4. GiGi wanted to celebrate Austin being 22 months as well, so we sang to Austin too.


Here is the present that I made for GiGi. Austin likes coloring and the artwork behind her name was done while they were together. The picture of Austin is her current favorite. 🙂

It was fairly simple to make. I just bought a pretty frame and cardstock from Michael’s. I used a craft knife to cut out the letters and placed various pieces of his artwork behind the cutouts. Easy Peezy!

Unfortunately, I also learned a few things while doing this craft:

1.) Always practice first on scratch paper to get your technique down.


2.) Never turn your back on a toddler


Apparently, face coloring is cooler than coloring on paper.


& he took a break for some Tummy Time!


I love you GiGi! Thanks for all that you do. We really appreciate you coming over everyday to watch the boys and make moving a lot less stressful. I don’t know what we would do without you. We will all be sad to be moving so far away from the amazing GiGi.
